This moist and delicious chocolate cake is really simple to make but don't let that deceive you, it tastes like it took hours of work!

Ingredients
  1. 225g self-raising flour
  2. 30g cocoa powder
  3. 225g granulated sugar
  4. 250g softened butter (1 pack)
  5. 4 medium eggs
  6. 1 teaspoon pure vanilla extract
  7. 1 teaspoon baking powder
  8. 250ml semi-skimmed milk
Instructions
  1. Soften the butter by suspending it in a plastic bag in a jug of lukewarm water for 10 mins or so.
  2. Preheat the oven to 170 degrees C.
  3. Put the butter into a large mixing bowl, then use the packet to grease two 7 inch cake tins.
  4. Add the sugar to the butter and cream together until smooth.
  5. Add the eggs, milk and vanilla and combine.
  6. Mix the flour, baking powder and cocoa powder in another bowl and then fold into the mixture with a spatula.
  7. Transfer to the cake tins and smooth out to fill the bottom.
  8. Bake in the oven for approximately 25 minutes, until a toothpick comes out clean.
Notes
  1. Once cooled you can fill the cake with whatever you like, I used crème patissière which was leftover from my Manchester Tart and it turned out excellent.
